OATMEAL TOFFEE COOKIES

1½ cups all-purpose flour

1 teaspoon baking soda

2 sticks unsalted butter, room temperature

¾ cup granulated sugar

¾ cup light-brown sugar

1 egg

1 teaspoon pure vanilla extract

1½ cups oatmeal

½ cup pecan pieces

1 cup chocolate chips or chunks

1 cup (5½ ounces) toffee pieces

• Preheat oven to 350 degrees.

• Sift together flour and baking soda, and set aside. Cream butter and sugars until fluffy, 2 to 3 minutes. Add egg, and mix on high speed to combine. Add vanilla extract; mix to combine.

• Add the sifted flour a bit at a time on a low speed until well combined. Add oatmeal, pecans, chocolate and toffee pieces; mix to combine. Chill dough for 30 minutes (optional). Scoop desired cookie size onto parchment-lined baking sheets. Bake until golden brown, 8 to 10 minutes.

• Remove from oven and transfer to a baking rack to cool.
