SHERREL'S APRICOT ALMOND BALLS

I was inspired by the bourbon ball recipe to create this little Amaretto almond confection in 1999 for the millennium. Then I formed these “To all a good night” confections into pretty little acorns using a slivered almond for the stem.

They helped decorate a 7½-foot yule log I made for a grand celebration at Enid's Symphony Center. They should only be enjoyed by Santa and other adults. I decided to make a lower-sugar version without the spirits but full of that lovely apricot and almond flavor combination. Both recipes follow and are super easy.

Makes 60 to 70 balls

Spirited “To all a good night” version

1 (11-ounce box Vanilla Wafers)

1 (6-ounce) bag dried California apricots*

1½ cups whole natural almonds

1 cup powdered sugar

¼ cup apricot jam

½ cup Amaretto liqueur

• Place all ingredients except jam and liqueur in work bowl of food processor fitted with knife blade. Pulse 30 to 40 times until mixture transforms into crumbs the size of uncooked rice or lentils.
