Green Chile Potato Soup

This is a simple, delicious way to perk up your potato soup.

3 cups green chile sauce

3 Yukon gold potatoes, peeled and diced

1 tablespoon butter

1 cup water


• In a small pot, boil enough water to cover the potatoes. Lower heat, and simmer potatoes until cooked through, about 15 minutes.

• When potatoes are cooked through, drain off water and replace with green chile sauce. Bring to a boil, then reduce heat to medium and simmer 30 to 45 minutes. Add water if mixture becomes to thick. About 10 minutes before serving, add a little butter and mix in as it melts.

Serve topped with Mexican cream, creme fraiche or sour cream, fresh cooked bacon pieces, green onions and grated Monterrey Jack or Swiss Cheese.
