- 1/4 c butter, softened
- 1 c sugar
- 1 egg
- 1/2 c sour cream
- 1 t vanilla
- 2 c flour
- 1/4 t soda
- 1 1/2 c sugar frosted flakes crushed
- 1/2 c coconut flakes
Cream butter and sugar. Add egg and mix well. Add sour cream, vanilla, flour and soda, stirring until smooth. Refrigerate until dough is stiff enough to roll into balls.
Crush cornflakes and mix with coconut flakes on a plate. Roll 1/2 teaspoon of dough in the flakes.
Place 4 cookies in a circle on a paper plate. Bake for 1 minute (longer for lower wattage microwave ovens) on high in your microwave. Let cookies cool on the plate before gently lifting from plate with a spatula. Makes 4 - 5 dozen.
