- 1 1/2 sticks, Hiland butter, softened to room temperature
- 3/4 c. sugar
- 1 large egg, room temperature
- 2 cups all purpose flour
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 1 bag colored translucent hard candy (I use Jolly Rancher brand)
In large mixing bowl, cream butter and sugar. Add egg and mix until well blended. Add flour and salt and mix just until blended. Stir in vanilla. Shape dough into a ball; cover and chill until firm (about 1 hour).
Line baking sheets with parchment paper. Preheat oven to 325 degrees. Roll out dough on floured surface to 1/4" thickness. Use cookie cutter to cut shapes. Using smaller cookie cutter (approx. 1-1/2" diameter) Cut out shape from center of cookie. Place cookie on parchment paper. Unwrap hard candy and place in center of cut out. Bake for 12-15 minutes - do not brown. Remove from oven and let set for five minutes before removing cookies from paper. Transfer to cooling racks to let cool.
