52 Recipes: Everything-in-the-Fridge-Except-a-Crust Quiche

So I’m trying to learn to cook. I’m already a pro at eating, but maybe it’d be good if I knew how to make the things I enjoy. My husband and I made a New Year’s Resolution to cook or create at least one new recipe each week in 2011. (My column tomorrow will be about this good faith effort.) I’m going to track our efforts each week by posting the recipe we try each Friday in a series called 52 Recipes. I’m going to try to remember to take pictures, but let’s just be clear: I’m not the Pioneer Woman. Obviously. She knows what she’s doing. Here’s the first recipe we came up with.

Week 1: Everything-in-the-Fridge-Except-a-Crust Quiche

Dump this stuff into an oven-safe dish: some eggs, some onions, some green peppers, some chopped spinach, maybe some sliced ham and whatever else you have sitting around in your fridge that’s about to expire. I also added some mushrooms that I diced beyond recognition because my husband likes them and I don’t. Pour in a little milk, unless it’s expired, in which case, pour it out instead of putting it back in the fridge.

If you’re feeling fancy, add garlic, basil and oregano. If your spices are like mine, you’ll need to beat them against the counter end for about 3 minutes before they break up enough to shake out. This might frighten any pets you have.

Find your whisk. Rise all the dust off. Whisk all the ingredients together. Bask in the glory of using a whisk, like real chefs do.
