52 Weeks: Baked Failure Pudding
I’m going to be honest: I didn’t really want to try anything new this week. So I looked for an easy out. And then I found one: cooked rice in my freezer. Yes! I looked in the index of my Better Homes and Gardens Cookbook under rice. Lo and behold, I found a way to make brown rice unhealthy. Jackpot. To made my version was horrible.
Baked Failure Pudding
Start with a good sized bowl – not too small. In that fantastic bowl, combine:
- 3 beaten eggs – already beaten – beaten, folks
- 1 1/2 cups of milk
- 1/3 cup of sugar
- 1 teaspoon vanilla
Beat until combined but not foamy. Immediatley realize that your bowl is way too small to stir this stuff up. Then realize that you probably were supposed to beat the eggs ahead of time.
Stir in 1 cup of cooked rice and 1/2 cup raisins or whatever you have around that’s raisin-ish. Pour all that goop into a 1 1/2 quarter casserole. Sprinkle with cinnamon or nutmeg. If you have both, sprinkle both, then gloat about the fact that you had not one but two spices on hand to bake something.
Put the casserole into a 2-quart square baking dish. Pour boiling water into the baking dish around the casserole – up to about 1 inch. Re-read the previous direction because that seems totally weird.
