'Cooking with Fresh Fall Flavors' workshop scheduled at extension service

Most of us enjoy the rich smells and deep color associated with fruits and vegetables harvested during the fall months.

Now, thanks to the OSU Cooperative Extension Service, residents can turn all those smells and colors into dishes guaranteed to tantalize the taste buds during a “Cooking with Fresh Fall Flavors” workshop Wednesday, Oct. 24. The cooking class is scheduled for 9 a.m. to noon at the OSU Cooperative Extension Service auditorium, 930 N Portland in Oklahoma City. The class will focus on food demonstrations and the class will get to sample everything that is prepared during the workshop and take home a cookbook designed especially for them.

“Fall is that special time of year when the harvest yields so much delicious bounty,” explained Amanda Horn, a Registered Dietitian and also a Family and Consumer Sciences Educator for the Oklahoma County OSU Cooperative Extension Service. “But many of us aren’t certain how to prepare these foods, and that’s where our workshop can help.”

In addition, the “Fresh Fall Flavors” class will teach participants which fruits and vegetables are in season this time of year and what they need to know to select the best quality.

“All of the dishes we’ll prepare during the workshop will be delicious and nutritious,” Horn explained, “but we’re also going to focus on ones that are fairly easy to prepare so that no matter how busy your schedule, you’ll have time to make these in your own kitchens.”

Since different squash varieties and pumpkins figure so prominently in fall harvests, many of the recipes created during the workshop will focus on these ingredients.
