Hatch Chili Ristras, a classic New Mexico symbol of spicy food, good luck and the ending of summer. The Ristra is another method of harvesting chili. After green chili is harvested, some of it is strung up to dry. Once the chili is completely dry, dry red chili is pulled from the Ristra, seeds are removed and the chili skins are boiled and blended to make the best of red chili. For generations, Ristras have served as a delicious food and a frequently used spice, and as a colorful hanging ornament.
