In this photo taken March 13, 2012, Kim Peck prepares her small-scale pasteurizer in Plainfield, Vt. One of the challenges Peck faced when raising a small herd of dairy goats was finding the equipment to pasteurize the milk to make cheese. There were plenty of pasteurizers for big dairies but virtually nothing for smaller operations, like her herd of about 50 Nigerian dwarf goats.
