It’s now been longer than a year since Kevin George first announced he would attempt to resuscitate the restaurant space on top of Founder Tower. George followed that spring 2013 announcement with an even bigger one: hiring chef Josh Valentine, fresh off a successful run on Bravo’s “Top Chef,” as kitchen maestro. Then he announced a monicker: The George Prime Steakhouse, which not only matches Kevin’s name but is an homage to Josh’s father George, who passed away in 2010.Then The George went all Book of Job as the renovation turned into a succession of misfortunes and headaches. Target dates of Thanksgiving, New Year’s, and Valentine’s Day flashed into the rear-view mirror faster than Lubbock, Texas with a tailwind.
At long last, it appears the wait is about to end. On Wednesday, The George will host a private event on Wednesday to dip a toe into service then determine what, if any, adjustments need to be made. The success of Wednesday’s shindig will determine the grand opening, but I can say with confidence that it should come within the next seven to ten days, perhaps fewer.
In other words, if you call the restaurant for a reservation on Friday, don’t be surprised if they’re ready to book a reservation. Of course, the Old Testament journey the restaurant and its staff have traveled makes them resistant to test fate any further so Kevin, Josh and general manager Vivian Wood aren’t making any promises today.
