DEAR READERS: Happy Thanksgiving to you! We all have much to be thankful for. Yes, I know it isn't Thanksgiving week, but I thought I would give you a chance to plan your menu and remind you to get your ingredients bought for last-minute baking, especially desserts prepared by a favorite recipe.
Is a pumpkin dessert usually one of your favorite Thanksgiving dishes? It doesn't have to be pie. Try these cookies. The recipe, and the cookies, were shared with me by Helen Rector, of Oklahoma City. She said when shopping for ingredients, if you have trouble finding pumpkin spice pudding mix, substitute vanilla pudding mix, adding 1 tablespoon of pumpkin pie spice.
NO-BAKE PUMPKIN OATMEAL COOKIES
1 1/2 cups granulated sugar
1/2 cup brown sugar
3/4 cup butter
2/3 cup milk
1 box (3.4 ounces) instant pumpkin spice pudding mix
3 1/2 cups quick-cooking oats
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
In medium saucepan, combine sugars, butter and milk. Bring to boil. Boil 2 minutes. Remove from heat and add pudding mix, stirring until well mixed. Stir in oats, pumpkin pie spice and vanilla. Continue stirring until well mixed and drop by rounded tablespoons onto waxed paper.

CRANBERRY APPLESAUCE SALAD
2 packages (3 ounces each) cherry gelatin
1 cup boiling water
1 can (16 ounces) cranberry sauce
