Melba's Swap Shop: Icing on the cake not needed

1 teaspoon vanilla

1 pound confectioners sugar

1/4 cup coconut milk

In large bowl of electric mixer, cream shortening and butter. Add vanilla. Gradually add sugar, beating well after each addition. Scrape sides and bottom of bowl often. When all the sugar has been added, the icing will appear dry. Add coconut milk, a little at a time, and beat at medium speed until light and fluffy.

For Chocolate Buttercream Frosting, add 1-cup cocoa when adding the vanilla.
