PASS THE PASTA SALAD
DEAR MELBA: You suggested we share some of our favorite tailgate party recipes. This Pasta Salad is good for serving at home or for tailgating.
6 cups water
2 teaspoons salt
2 cups pasta
1 cup salad dressing or mayonnaise
3 tablespoons prepared mustard
1 package (7 ounces) prepared guacamole
1/2 teaspoon paprika
1/4 teaspoon lemon pepper
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil
2 tablespoons grated Parmesan cheese
1 cup canned green olives, sliced
3 slices crisply fried bacon, coarsely crumbled
1/2 cup coarsely shredded carrots
1/2 cup chopped celery
5 tiny tomatoes, garnish
In large saucepan, bring water and 2 teaspoons salt to boil. Stir in pasta. Boil, uncovered, 5 to 10 minutes, until tender. Drain and rinse with cool water. Makes about 4 cups cooked pasta. Stir in salad dressing, mustard and guacamole.
In medium bowl, combine paprika, lemon pepper, 1 teaspoon salt, oregano, basil and Parmesan. Stir into pasta mixture.
In large bowl, stir together green olives, fried bacon, carrots and celery. Stir into pasta.
Garnish with tomatoes. Cover and refrigerate.
Makes 6 to 8 servings.
If taking to a tailgate party, put in cold bag with a bag of ice. Have fun, and I hope your team wins, if you're an Oklahoma State fan.
