DEAR READERS: Friday is Valentine's Day. Although it is not a legal holiday, everyone celebrates it. But why is it celebrated?

There were two Christian martyrs named Valentine who were beheaded on Feb. 14. One allegedly died in Rome in A.D. 269, and the other died in Terni, 60 miles from Rome, in A.D. 350. But the celebration of that day has nothing to do with their lives, according to The World Book Encyclopedia, which traces the beginning of Valentine's Day to the English poet Geoffrey Chaucer. If you figure that out, let me know.

But we celebrate anyhow with our cards, good wishes and food. And, of course, recipes like the following for 3-2-1 Muffins.

My daughter, Sandy Killian, put the cake mixes in a plastic bag and shook it. To make a muffin, she sprayed a coffee mug with nonstick spray, added the mix, whisked in the water and put it in the microwave. She said, “It's too cool. It's spongy like angel food cake. The kids would like to make it. And it tastes good.”

DEAR MELBA: This recipe for 3-2-1 Muffins came from a friend in Monroe, La.


1 box (16 ounces) angel food cake mix

1 box (18.2 ounces) cake mix, any flavor

In glass container, whisk both cake mixes together. Cover and store.

To use: In small microwave-safe cup, blend 3 tablespoons of mix with 2 tablespoons water. Microwave 1 minute. Serve.

They're great with a morning cup of coffee or just for a snack.
