GOOD PIE BAKERS

DEAR MELBA: My mother, Norene Sharp, of Wayne, celebrated her 96th birthday in April. She still makes this delicious pecan pie that is loved by family and friends. She brings it to church functions, funeral dinners, and if you’re lucky, she’ll just make one and give it to you. My sisters and I try to duplicate Mom’s pies, but she just has the touch. She is amazing.

NORENE’S PECAN PIE

3 eggs

1 cup granulated sugar

1 cup white syrup

3 tablespoons melted butter

1 teaspoon vanilla

1 1/2 cups chopped pecans

1 unbaked 9-inch piecrust

•Preheat oven to 325 degrees. In large mixing bowl, beat eggs slightly with a fork. Stir in sugar, syrup, butter, vanilla and pecans. Spread in piecrust. Bake 45 minutes to 1 hour until lightly browned and center does not shake. Cover with strips of foil if browning too quickly. Serve warm or cool.

DEAR MELBA: This is my mom’s Strawberry Cream Pie that was served at Martin’s Cafe in Harrah, 1952-1979. We’ve had many requests for this recipe. It was served daily at Martin’s Cafe for 27 years. Mother made 12 to 15 pies every day and used no standard form of measuring. The amounts in the recipe are my best rendition of what went into that famous pie. Over the years, my meringue did not measure up to hers, so I had to improvise.

LENA MARTIN’S STRAWBERRY CREAM PIE

PIECRUST

1 1/3 cups flour

Pinch of salt

1/4 cup cold margarine

1/4 cup shortening

3 tablespoons cold water

•Preheat oven to 400 degrees. In small mixing bowl, mix flour and salt. Cut in margarine and shortening until it looks like coarse crumbs. Add water and mix as little as possible to get a ball of dough.
