1 tablespoon butter
1 teaspoon olive oil
2 eggs
2 corn tortillas
¼ cup refried black beans
½ cup warm chirmol
1-2 tablespoons queso fresco, crumbled

Salsa verde to taste
→Heat a skillet and add olive oil. Heat the tortillas one at a time, pat dry and place first tortilla on a plate. Cover with layer of black beans and top with second tortilla. Cover with foil or store in warm oven while eggs cook.
→Melt the butter and fry eggs over medium heat, being careful not to break the yolks. Flip carefully if you want them over easy.
→Place the eggs on top of the tortilla stack and drizzle with chirmol. Garnish with cheese and parsley. Serve with warm tortilla chips and salsa verde.
