DEAR MELBA: Some of my friends call this cheesecake, some call it pie. By any name, they all agree, it’s pretty awesome. And it’s so easy. You don’t have to bake it and can use a store-bought crust. I prefer the vanilla wafer crust, but the shortbread or graham cracker crusts are good, too.

4 packages (8 ounces each) cream cheese, room temperature 3/4 cup sugar 1 package (3 ounces) peach gelatin 1 can (15 ounces) sliced peaches in juice, drained and chopped 1 container (8 ounces) prepared whipped topping 1 prepared vanilla wafer piecrust →In large mixer bowl, beat cream cheese and sugar until blended. Add dry gelatin; mix well. Stir in peaches and whipped topping. Spoon into crust and refrigerate. It can be garnished with sliced peaches. They were made with chocolate chips, and half of the chips were melted before the brownies were baked. I really need the recipe again.
