Recipe offered for cheesecake/pie

DEAR MELBA: Some of my friends call this cheesecake, some call it pie. By any name, they all agree, it’s pretty awesome. And it’s so easy. You don’t have to bake it and can use a store-bought crust. I prefer the vanilla wafer crust, but the shortbread or graham cracker crusts are good, too.

Peaches and Cream Cheesecake
4 packages (8 ounces each) cream cheese, room temperature

3/4 cup sugar

1 package (3 ounces) peach gelatin

1 can (15 ounces) sliced peaches in juice, drained and chopped

1 container (8 ounces) prepared whipped topping

1 prepared vanilla wafer piecrust

→In large mixer bowl, beat cream cheese and sugar until blended. Add dry gelatin; mix well. Stir in peaches and whipped topping. Spoon into crust and refrigerate. It can be garnished with sliced peaches.

DEAR READERS: Renee asked for a recipe to make the submarine sandwiches that the Junior Hospitality Club, a local women’s service organization, sold at the state fair in the past.

We can’t provide the recipe, but we can tell you where to get the sandwiches. They’ll be selling them from 11 a.m. to 2 p.m. Friday and Saturday at Mayfair Baptist Church, 2715 NW 50.
