EUREKA SPRINGS, Ark. -- If you’re in the mood for a delightfully lively and visually palatable place to dine, all the while enjoying the gentle breeze of a cool spring evening, then Casa Colina in Eureka Springs is the quintessential cantina for you.
Colina’s outdoor dining area is an indelible blend of opportunity, whether from relaxing among the natural surroundings the patio is nestled in, or mastering your people watching skills as the colorfully convivial tourists pass by.
Casa Colina’s cuisine is deliciously piquant and strikingly presented. Owners Joe and Dani Joy’s culinary educations born from Joe’s years of managing upscale resorts in New England, coupled with Dani’s Texas roots and travels to Mexico, seem to infuse good feelings with good food.
Dani Joy, a former mayor of Eureka Springs, has a heart the size of Texas. Chef Dani’s gracious personality brightens all the more when serving her Tex Mex masterpieces.
Dani began escorting us through the Casa Colina menu with a tantalizingly displayed chilled aperitive, guacamole coupled with her sassy Pepe Taco’s Salsa.
Included in this San Antonio stroll down culinary lane was an enticing platter of Casa Colina Crepes filled with shrimp, mushrooms and spinach, sautéed in a perfectly blended white wine sauce.
