The pair revealed their engagement on Sunday's season finale when Jef, 27, successfully proposed to Emily, 26, with a Neil Lane engagement ring that boasts a 2.5-carat emerald-cut diamond.
They recently spoke to reporters about keeping their relationship a secret, spinoff shows, when Emily's 7-year-old daughter can watch the season, and more.
On Emily's 7-year-old daughter, Ricki, keeping the couple's relationship a secret.
Emily: She doesn't know we're engaged yet. It feels like we got engaged again since everyone just found out. But I told her that it was a big surprise and that it was like a surprise party and that we don't want to ruin it for everybody. She's a pretty good secret-keeper, I found out.
On meeting the parents.
Emily: I got to meet Jef's mom the other night, the night of the "After the Final Rose" [episode]. It was a surprise to me—I didn't even know she was going to be there. But she was so sweet—just amazing—couldn't have been nicer. And I got to talk to his dad on the phone, and he was the same: could not be nicer or more down-to-earth.
Jef: And my family, as Emily knows, is very close. And they are absolutely in love with Emily. They're crazy about her and so happy for the both of us. My dad's looking forward to meeting Emily and Ricki. And the rest of the family is looking forward to meeting Ricki and having them join the family—they're really excited.
On Jef sharing qualities with Emily's late fiancé, NASCAR driver Ricky Hendrick.
Emily: Absolutely. I think I've always been attracted to that type of [free-spirited] guy. Ricky was absolutely one-of-a-kind and so is Jef. He is one-of-a-kind too. So in that respect, they have a lot in common.
On Jef meeting Ricky Hendrick's family.
Emily: The Hendricks are just like my own family. I love them like my own mom and dad and they love me just like a daughter. I've been very close with them for a lot of years and they've seen me go through ups and downs and they want me to be with anyone who makes me happy. And Jef does. ... I'm sure that meeting will happen soon.
On plans for the future as a family.
Emily: First of all, Jef is going to move to Charlotte. He's going to get an apartment there and see where things go and just live our life every day. He's going to join in Ricky's and my schedule. Obviously, I'm a girl, so I've been looking at wedding magazines and all that, but nothing's set in stone.
